“I see my business as a proper food trade… everything is homemade, using only fresh produce, and word of mouth does the rest,” he says proudly.
Open Monday to Saturday from 11:30am, the spot has built a solid reputation with regulars. Young people from the Mont Saint Jean area like to meet there for tailored meal deals, but Will attracts hungry passers-by just as much. Here, you can build your meal as you like: beef is minced to order, chicken is marinated for hours, and that generosity shows on every plate.
The must-tries? “Panisses, burgers, chips, wraps… and sometimes even ‘américains’, depending on what the youngsters fancy,” Will smiles. Panisses — chickpea-flour chips reminiscent of Niçoise socca — have quickly become a little house emblem.
The coming year will be full of new things. With the new cinema opening nearby, Will is already imagining an extended experience: “In the afternoon, I’d like to set up a small tearoom, with a crêpe cart, tiramisù, chocolate mousses, cheesecakes, all served with hot drinks like a proper indulgent cappuccino. Something a bit different that makes you want to linger.”
This project hasn’t come out of nowhere. Will has worked in food since he was 16. A trained pastry chef, he was shaped by his apprenticeship with Monsieur Fantino, then by ten years at Charlot 1er as head pastry chef. “I worked on specialities like Grand Marnier soufflé, nougat glacé, chocolate fondants, homemade ice creams… lots of homemade ice cream,” he recalls.
Over time, a desire for proximity and sharing led him towards more convivial catering: beach sandwiches, snacking, and direct contact with customers. “What made me want to go for it was striking out on my own, working with local, fresh produce, and seeing people light up in front of a plate.”
At Will Food, it’s not just about eating — it’s about a little experience. “What I love most is people flourishing. When they come in, they leave with a smile. They come back with a smile. They’re amazed to see everything cooked right in front of them.”
